Best ever Banana Bread....

I just made this today and I modified it a little. Since we are watching our waist lines around here I made it lower in fat and calories. The original calls for liquor which I did not use but I bet would make it taste pretty good too.

Sour Cream Banana Bread

1 c butter
1 1/2 c splenda (or sugar)
3 eggs
2 or 3 ripe bananas
4 c flour (plus 2 tbsp
1 1/2 tsp baking powder
1 tsp baking soda
1 1/2 c sour cream (red fat or fat free)
1 c chopped walnuts (optional)

Cream together butter and sugar. Add eggs and beat. Add bananas and beat. Mix dry ingredients together in separate bowl.

Add the well mixed dry ingredients to the cream mixture alternately with the sour cream. Beat until smooth.

Stir in nuts.

Pour into 2 large greased and floured loaf pans. Bake on 350 degrees for 1 hour and 15 min. To test for doneness insert sharp knife into center of bread. It if comes out clean then the bread is done.

Freezes well too!!
